- 4 Tomatoes, diced
- 1 Cucumber, peeled & diced
- 1 Red Bell Pepper, diced
- 4 Tablespoons Extra Virgin Olive Oil
- Oregano, Dried or Fresh, season to taste
- Kosher Salt, season to taste
- 1/2 cup Feta Cheese (or nondairy cheese like Kite Hill), cut into chunks
- Place all of the ingredients in a large bowl and gently mix well.
