Crock pot spinach and artichoke dip

 To make a delicious crock pot spinach and artichoke dip, follow these simple steps:

  1. Combine 8 oz of chopped spinach and 8 oz of chopped artichokes in the crock pot.
  2. Add 16 oz of cream cheese, 1/2 cup of sour cream, and 1/2 cup of mayonnaise.
  3. Mix in 1 cup of shredded mozzarella cheese and 1/2 cup of grated Parmesan cheese.
  4. Season with garlic powder, salt, and pepper to taste.
  5. Cook on low for 2-3 hours, stirring occasionally until creamy and heated through.
  6. Serve warm with tortilla chips, bread, or veggies for dipping.

Tortellini Soup

 1 bag of frozen tortellini

1 small bag of fresh spinach

2 cans of Italian style diced tomatoes

1 box or 4 cups of vegetable broth

1 block of cream cheese


Put all ingredients in crockpot, chunking up the cream cheese. Cook on low for 5-6 hours.

Artichoke Spinach Dip


Ingredients

1/4 cup butter
1 (10 ounce) package frozen chopped spinach, partially thawed
1 (14 ounce) can artichoke hearts, drained and chopped
2 (8 ounce) packages cream cheese, softened
1 cup sour cream
1 cup mayonnaise
1 cup grated Parmesan cheese
garlic salt to taste

Directions

Melt butter in a large saucepan over medium heat. Stir in the spinach and artichoke hearts. Cook until tender, about 5 minutes.

Mix cream cheese and sour cream into the spinach mixture. Stir in Parmesan cheese and garlic salt. Cook, stirring occasionally, until thickened, 10 to 15 minutes. Serve warm.

Country Ham, Spinach, and Mozzarella Strata

6 slices day-old white bread, crusts removed and torn into pieces
1 cup finely chopped or shredded mozzarella cheese (about 4 ounces)
1 cup diced cooked Smithfield ham (or other style cured country ham)
One 10-ounce package frozen chopped spinach, thawed and squeezed dry
3 tablespoons butter, melted
2 cups milk
6 large eggs
1 tablespoon Dijon mustard
Pinch of ground nutmeg
Freshly ground black pepper to taste

1. Preheat the oven to 350 degrees. Butter a 2-quart casserole.

2. Sprinkle half the bread pieces over the bottom of the prepared casserole. Top with half the cheese, sprinkle the ham evenly over the cheese, arrange the spinach evenly over the top, sprinkle on the remaining bread pieces, and drizzle the melted butter over the top.

3. In a large mixing bowl, whisk together the milk, eggs, mustard, nutmeg, and pepper till well blended and pour slowly over the casserole. Cover with plastic wrap and chill at least 30 minutes.

4. To bake, sprinkle the remaining cheese over the top and bake till a knife inserted in the center comes out clean. 45-50 minutes.

Makes 6 servings.
